In many parts of the world, burdock is treated as an invasive weed. It is particularly problematic to sheep herders because the value of wool is downgraded when sheep become tangled with burdock burrs. In addition, dairy cows who habitually graze on the plant may start to produce sour milk.
In Japan, however, burdock root is considered a delicacy. The sliced root, together with shredded carrot, is simmered in a base of sesame oil, sweet rice wine and soy sauce to produce a traditional vegetable dish called kinpira gobō.
